





Earlier this week I had the opportunity to meet with Randy Layman, Managing Partner of Chook Charcoal Chicken. Chook was one of the restaurants on my 2019 Bucket List so I was very excited to visit. If you love chicken, or even if you are a little iffy on chicken, this place will change your mind. I don’t think I will ever be able to get a rotisserie chicken from King Soopers ever again.
Chook opened in December 2018 and is founded by Adam Schlegel and James Beard winner, Alex Seidel. Their goal is simple – healthy, affordable delicious food. Chook is a very family friendly restaurant with over 40 seats, and includes and play area for small children. Roughly half of their business is in the form of take out and they make it so easy – order online, park in one of the to go parking spots, give them a call, and they bring your food to you! I don’t know about you, but if I don’t have to get out of my car that is winning!

Chook specializes in all natural chicken that is prepped and seasoned for over 48 hours before rotating on a spit over hot coals. Their menu features healthy, sustainable sides that pair perfectly with chicken.
Although everything on their menu looked amazing, I went for the 1/2 chicken, grilled carrot salad, charred mixed veg, mac & cheese, and sweet rolls. The chicken was some of the best chicken I have ever tested. So flavorful and juicy, not a bit dry like most chickens get. My favorite side was the grilled carrot salad. It had arugula, quinoa, dates, local feta, cashews, and slightly grilled carrot ribbons. In addition to great food, they also serve beer, wine and pre-made cocktails. Don’t let the sound of pre-made cocktails fool you, I had the dirty martini, which was amazing.

One thing I thought that set Chook apart from other restaurants in Denver, besides their commitment to sustainability and being a Denver Certified Green Restaurant, is their passion to give back to the community. Every month, they pick 3 organizations to give to – usually an organization that is tied to the environment, children, or social matters. When you place your order you are given a token to pick one of the 3 charities. At the end of the month 1% of sales is split between the months 3 charities.
Overall, I was very impressed with Chook. Not only is their food affordable and healthy, but I love how they are making a difference and giving back to the community. I can’t wait to go back!
